Simple Steam Fish (Pomfret)

  • Pomfret
  • Ginger (cut into strips)
  • Sugar
  • Oyster sauce
  • Light soy sauce
  • Water
  • Pepper
  • Ginger (cut into strips)
  • Shallot leaves
  • Garlic (minced)

  1. Clean the fish. Put a few strips of ginger inside the fish and spread some below and on top of it.
  2. Mix the seasoning together, start with 1 tsp sugar, 1 tbsp oyster sauce, 1 tbsp soy sauce, 2 tbsp water and mix together. Taste and add more if any of the seasoning is not enough.
  3. Pour the sauce over the fish and spread it evenly.
  4. Steam the fish for 15 minutes (time varies depending on fish sizes). 
  5. While fish is steaming, heat some oil in low fire. Add in minced garlic and slowly fry until turns brown. Repeat the same for ginger.
  6. Once fish is cooked, sprinkle fried garlic and ginger on top. Follow by shallot leaves. Pour some garlic/ ginger oil on top.
  7. Serve while it is hot.
