- Oyster sauce
- Light soy sauce

- Shallot leaves
- Garlic (minced)
Method
- Clean the fish. Put a few strips of ginger inside the fish and spread some below and on top of it.
- Mix the seasoning together, start with 1 tsp sugar, 1 tbsp oyster sauce, 1 tbsp soy sauce, 2 tbsp water and mix together. Taste and add more if any of the seasoning is not enough.
- Pour the sauce over the fish and spread it evenly.
- Steam the fish for 15 minutes (time varies depending on fish sizes).
- While fish is steaming, heat some oil in low fire. Add in minced garlic and slowly fry until turns brown. Repeat the same for ginger.
- Once fish is cooked, sprinkle fried garlic and ginger on top. Follow by shallot leaves. Pour some garlic/ ginger oil on top.
- Serve while it is hot.
